Hi, I’m Leah and I’m a Pinterest Procrastinator. You probably are thinking, “Oh, I pin things when I’m bored, too! Don’t even worry about it.” Yeah…that’s not the kind of procrastinating that I do. I pin all of these great recipes, outfits, hair tutorials, etc. and NEVER get around to actually trying them. That easy fishtail braid that I’ve been meaning to teach myself since last summer? Maybe I’ll get around to it. That delicious looking snickerdoodle bread? Eh, that just seems like a lot of work right now.

Do you get my point? It’s a vicious cycle.

However, Sunday I was skimming through things I pinned over the past few months and found these No Bake Energy Bites by Gimme Some Oven. They looked delicious and I had all of the ingredients I needed, so I didn’t let myself think about it before I rushed to the kitchen and pulled down the oats and honey. They really are delicious and versatile. I didn’t add the coconut because coconut belongs in suntan lotion, not food – in my humble opinion, of course.

Pro tip: Throw all the ingredients in your Kitchenaid mixer and let it do all the hard work for you.

I followed her recipe to the letter except the coconut. Oh, and my Ninja chopper didn’t grind up my flax seed like I thought it would, so I ended up using them whole. It worked out. I’ve added the nutrition information based on MyFitnessPal below. I hope you enjoy!
